Crispy banana chips need low heat and time, not a blast of high temperature. Slice firm yellow or green bananas a quarter inch thick, toss with cinnamon oil, then air fry at 300°F with a flip halfway. Let them cool five to ten minutes—they crisp up as they dry.

Green or yellow bananas hold their shape. Spotted ripe bananas turn mushy and never crisp properly.
Mix cinnamon into the oil first so every slice gets an even coat. Sprinkling dry spice clumps.
Chips feel slightly soft hot out of the basket. A few minutes on the counter finishes the dehydration.

Peel and slice bananas about 1/4 inch thick. Mix oil and cinnamon in a small bowl, pour over the slices and toss gently until coated.

Arrange slices in a single layer in the basket. Air fry 25-28 minutes at 300°F, flipping halfway, until dehydrated and crisp at the edges.

Cool 5-10 minutes on a plate. The chips will crisp further as they reach room temperature.
