Air Fryer Baked Potato
Russets with a dry, salted skin and a steaming interior: faster than the oven, crisper than the microwave.
Sweet potatoes carry more moisture and sugar than russets, so they soften easily. A thin cornstarch dusting, space in the basket and a mid-cook toss are what get you browned edges instead of limp sticks.

A light coat pulls surface moisture and browns better than oil alone. Shake off excess so it does not taste pasty.
Sweet potato fries steam into soft wedges if stacked. Two batches beat one sad full basket.
Season as soon as they leave the basket so the salt sticks. Eat soon: they soften as they cool.

Cut even sticks. Toss with cornstarch until lightly coated, then add oil, salt, paprika, garlic powder and pepper.

Preheat the air fryer to 380°F (193°C). Load a loose single layer.

Cook 8 minutes. Toss hard and cook 6-8 minutes more until the edges brown and the centers are tender.
Taste and add a pinch more salt if needed. Serve immediately.
If cooking a second batch, wipe excess sugar bits from the basket so they do not smoke.
