Air Fryer Greek Lemon Oregano Chicken

Lamb koftas usually go on a grill, but the air fryer gives you the same browned crust without drying out the meat. Mix minced lamb with onion, garlic and Middle Eastern spices, shape onto skewers and chill so the flavors meld. Cook at 350°F, turning once, and serve in flatbread with salad and lemon.

At least one hour in the fridge helps the koftas hold their shape and taste deeper. Up to two days ahead works well.
Combine until seasoned through. Kneading too long makes dense, tough koftas.
Flip or rotate the skewers at the midpoint so every side browns evenly.

Mix lamb, onion, garlic, fresh coriander, dried mint, thyme, ground coriander, cumin, chili flakes, salt and pepper until combined. Divide into six portions, mould into sausage shapes and thread onto skewers.

Refrigerate at least 1 hour, or up to 2 days covered.
Preheat the air fryer to 350°F (180°C). Arrange skewers in a single layer. Air fry 10-12 minutes, turning halfway, until browned outside and cooked through (160°F / 71°C).

Serve in warm flatbreads with crunchy salad and a squeeze of lemon.
