Mix

  1. Stir the peanut butter, sugar, egg, salt and vanilla (if using) in a bowl until a soft, even dough forms. No mixer needed.

  2. Scoop tablespoon-sized balls and place them on a plate. Press each ball with a fork in a crosshatch pattern to flatten slightly.

Bake

  1. Preheat the air fryer to 325°F (163°C). Cut a piece of parchment to fit your basket so the dough does not stick to the grate.

  2. Bake 4-6 cookies at a time for 7-9 minutes. The edges should look set while the centers still look a little soft. They firm up as they cool.
