Scrub the potatoes under cold water and dry them well. Prick each one a few times with a fork so steam can escape.
Rub every side with oil, then sprinkle with kosher salt so the skins can crisp.

Preheat the air fryer to 400°F (204°C). Set the potatoes in a single layer with a little space between them.

Cook 35-40 minutes, turning once at about 20 minutes. They are done when a knife slides through the center with no resistance and the skins feel tight.
