Cooking oil

Neutral oils (avocado, canola, grapeseed) for high-heat crisping without competing flavor.

In the air fryer. A light coat beats deep frying volumes. Mist or toss, don't flood the basket.

Origin

Depends on seed or fruit. Canola (rapeseed), sunflower, avocado, etc.

Herbal & culinary notes

Choose oils suited to your heat. 'Neutral' usually means refined and higher smoke point.

How to store

Sealed, cool, dark. Note the best-by date; fryer oil that's dark, foamy, or smelly should be discarded safely.

Food safety

Don't reuse oil that smoked hard or cooked raw meat without filtering and sensible limits.

Food hazards

Grease fires. Never pour water on burning oil. Allergen depends on source (soy, peanut, etc.).
