Cool filling or torn pastry

Hot potato steam softens wrappers until they tear at the fold. Make the filling first, then fold while it is room temperature.

Oil brush, not a dunk

A thin coat on both sides is enough for blistering. Heavy oil pools and softens the pastry before it browns.

Frozen stash

Freeze uncooked samosas on a tray, then bag. Cook from frozen a few minutes longer. Never thaw or they weep.

Step-by-step instructions

Follow each step in order. Photos show what to look for so the basket finish matches the plate.

Make the filling

  1. Heat 1 tablespoon of oil in a pan. Add the cumin seeds and cook until they sputter and smell fragrant. Stir in the onion and ginger and cook until soft. Add the spices, mashed potato, peas, salt, lemon and cilantro. Taste and adjust. Spread on a plate and cool completely: warm filling tears the wrappers.

Fold and cook

  1. Place about 2 tablespoons of filling on each wrapper. Fold into a tight triangle and seal the edge with a dab of water, pressing firmly so nothing leaks in the basket.

  2. Brush both sides lightly with oil. Preheat the air fryer to 375°F (190°C).

  3. Arrange with a finger-width gap between samosas. Cook 7 minutes, flip carefully and cook 6-7 minutes more until the pastry is blistered and tan, not pale.

  4. Rest 2 minutes before biting in: the filling stays molten. Serve with mint chutney or tamarind sauce.
