Vinegar

Acetic acid brightness. Rice vinegar for gentle sweet-sour, cane vinegar for Filipino adobo notes.

In the air fryer. Use in glazes and finishing sprays; pure vinegar doesn't 'cook off' the same way wine does.

Origin

Wherever alcohol ferments further into acid. Wine, rice, apple, cane.

Herbal & culinary notes

Culinary acid first. Diluted vinegar drinks are trendy; evidence for big metabolic claims is limited.

How to store

Cool pantry sealed. Keeps indefinitely; cloudiness ('mother') in raw vinegars is often harmless fermentation.

Food safety

Acid helps pickling only with tested recipes. Fridge pickles are not shelf-stable canning.

Food hazards

Glacial/high-strength acetic acid is corrosive. Kitchen vinegars are diluted. Don't mix cleaning chemicals casually with vinegar and bleach.
