Air Fryer Sweet Potato Fries
Crisp-edged sweet potato fries with a light cornstarch coat: less soggy than oven trays.
Crisp potato cubes, spicy tomato sauce, garlic aioli: tapas without deep-frying at midnight. The basket handles the crunch; the sauces do the bar-snack drama.

After cutting, pat hard. Wet potatoes steam and never crisp.
Make bravas sauce and aioli while the potatoes cook so everything hits the plate hot together.
Cubes soften under sauce. Spoon sauces on at the table, or lightly drizzle and leave more on the side.

Cut the potatoes into 3/4-inch cubes. Pat them very dry with a towel. Toss with olive oil, smoked paprika and salt.

Preheat the air fryer to 400°F (204°C). Cook 12 minutes, toss well and cook 8-10 minutes more until the edges are brown and the centers are tender.

While the potatoes cook, simmer crushed tomatoes with garlic, smoked paprika, cayenne, oil and salt for 8-10 minutes until slightly thick. Stir the mayonnaise, grated garlic and lemon for the aioli.
Pile the hot potatoes on a plate. Spoon the bravas sauce over or beside them and add dollops of aioli.
Eat right away while the cubes are still crisp. Extra sauce on the side keeps leftovers from going soggy.

Spiced potato and pea filling in a thin pastry. Brushed with oil, they blister in the basket instead of swimming in ghee.

The UK's most-wanted air-fryer side: parboiled, roughed up and blasted until the edges go glass. Goose fat if you have it; oil if you do not.
