Air Fryer Baked Potato
Russets with a dry, salted skin and a steaming interior: faster than the oven, crisper than the microwave.
Crisp diced potatoes with onion and paprika. Parboil or microwave briefly so the centers soften before the edges brown in the basket.

A short boil or microwave softens the center so you are not waiting forever for raw potato to cook through.

Microwave the potato cubes with a splash of water, covered, 4-5 minutes until just starting to soften. Drain and pat dry. Toss with oil, onion, paprika, garlic powder, salt and pepper.

Preheat the air fryer to 400°F (204°C).
Cook 15-18 minutes, shaking every 5 minutes, until the edges are browned and crisp. Finish with parsley if you like.

Serve with eggs, bacon or sausage.
