Air Fryer Chocolate Fondants

These little chocolate fondants have a set edge and a molten middle, and the air fryer bakes them fast in buttered ramekins. Use good 70% dark chocolate, fill the moulds, and pull them when the tops are set but the centers still wobble. Serve immediately with crème fraîche.

Butter and flour the moulds

Brush ramekins with melted butter and dust with flour so the fondants turn out cleanly.

70% chocolate matters

Milk chocolate will not give the same deep flavor or set the same way. Good dark chocolate is worth it here.

Do not overbake

Pull when the edges look set and the middle still jiggles slightly. They keep cooking as they rest.

Crowding. Two ramekins fit most 6 qt baskets with space between them.
Basket liner (optional). Air fryer paper basket liners are optional. They catch drips and make cleanup easier. Use the molded type that fits your basket; air flows around the sides. Never cover the whole basket floor with solid foil.

Step-by-step instructions

Follow each step in order. Photos show what to look for so the basket finish matches the plate.

Prep

  1. Brush two small ramekins with melted butter and dust with flour, tapping out the excess.

  2. Melt chocolate and butter together in a bowl over simmering water or in short microwave bursts. Stir until smooth and cool slightly.

  3. Whisk egg, egg yolk, sugar and salt until pale and thickened, about 2 minutes. Fold in the melted chocolate, then sift in the flour and fold gently until just combined.

  4. Divide batter between the prepared ramekins, filling to just below the rim.

Bake

  1. Preheat the air fryer to 360°F (182°C). Air fry 10-12 minutes until the tops are set and coming away from the sides but the centers still feel soft.

  2. Rest 1 minute. Run a knife around the edges, invert onto plates and serve with crème fraîche.
