Fennel roasts beautifully in the air fryer—wedges keep their layers while the cut faces caramelize. Trim the stalks, slice into eight wedges with the core intact, toss gently with olive oil and seasonings, then cook at 380°F until tender and golden. A squeeze of lemon at the table is the classic finish.

Leave the bottom of the bulb intact so the layers stay together. Cut off too much and the wedges fall apart in the bowl.
Fennel layers are fragile. A light hand when coating with oil keeps wedges whole.
Large bulbs may need more than eight wedges so every piece cooks through without burning the tips.
