Mix

  1. Toss the batter

    Salt onions 10 minutes; squeeze lightly. Toss with chickpea flour and spices, adding just enough water to coat in a sticky batter.

    Too much water makes flat, pale bhajis. Think onion salad with flour clinging, not pancake batter.

Cook

  1. Air fry in mounds

    Scoop small mounds into the basket, mist well, cook at 375°F (190°C) for 11-13 minutes, flipping once, until deep gold and crisp.

    Mist again after the flip. Serve hot with chutney.
