Roma tomatoes roast fast in the air fryer and turn jammy at the edges. Halve, toss with olive oil, oregano, salt and pepper, then cook skin side down at 370°F for about fifteen minutes. Eat on their own, over pasta, with garlic bread, or blend into sauce and soup.

Placing the cut face up keeps the flesh from sticking while the skin protects the shape.

Halve the tomatoes and add to a bowl with olive oil, oregano, salt, pepper and red pepper flakes if using. Toss gently to coat.

Arrange tomato halves skin side down in the air fryer basket. Air fry at 370°F (188°C) for 15 minutes until blistered and jammy.

Remove carefully and serve over pasta, with crusty bread, or blend into sauce.
