Air Fryer Roasted Cashews

Two-stage roasting

Toast plain cashews first at 350°F, then add spices at a lower heat so the seasonings do not burn.

Watch the last minute

Cashews go from golden to burnt quickly. They crisp further as they cool on the counter.

Use whole nuts

Whole cashews roast evenly. Broken pieces scorch faster and look less appealing in a gift jar.

Crowding. About 2 cups fits one layer in a 6 qt basket. Cook in batches for larger amounts.
Basket liner (optional). Air fryer paper basket liners are optional. They catch drips and make cleanup easier. Use the molded type that fits your basket; air flows around the sides. Never cover the whole basket floor with solid foil.

Step-by-step instructions

Follow each step in order. Photos show what to look for so the basket finish matches the plate.

First roast

  1. Preheat the air fryer to 350°F (175°C). Toss cashews with 1 tsp oil in a bowl.

  2. Spread cashews in a single layer in the basket. Air fry at 350°F for 4 minutes, shaking at 2 minutes.

Spice and finish

  1. Return cashews to the bowl. Add the remaining 1 tsp oil and all spices. Toss until evenly coated.

  2. Transfer back to the basket. Air fry at 320°F (160°C) for 4 minutes, shaking halfway. Watch closely; do not exceed 6 minutes after adding spices.

  3. Cool on a plate. Cashews crisp up as they reach room temperature.
