Roasted cashews in the air fryer are faster than the oven and perfect for small batches. Toast whole cashews with a little oil first, then toss with curry leaf powder, salt and chili for a crunchy Diwali-style snack or edible gift.

Toast plain cashews first at 350°F, then add spices at a lower heat so the seasonings do not burn.

Preheat the air fryer to 350°F (175°C). Toss cashews with 1 tsp oil in a bowl.
Spread cashews in a single layer in the basket. Air fry at 350°F for 4 minutes, shaking at 2 minutes.

Return cashews to the bowl. Add the remaining 1 tsp oil and all spices. Toss until evenly coated.

Transfer back to the basket. Air fry at 320°F (160°C) for 4 minutes, shaking halfway. Watch closely; do not exceed 6 minutes after adding spices.
Cool on a plate. Cashews crisp up as they reach room temperature.
