Bread

  1. Pound and bread

    Season cutlets. Dredge in flour, egg, then panko mixed with paprika. Press crumbs on. Mist both sides with oil.

    Let breaded cutlets rest 5 minutes so the coat sets.

    Tip. Use one hand for dry and one for wet to avoid clumpy fingers.

Cook

  1. Air fry

    Cook at 390°F (199°C) for 9-11 minutes, flipping at 5, until crumb is deep gold and pork is 145°F (63°C). Serve with lemon.

    If crumb looks pale, mist again and add 1-2 minutes.
