Fiskekaker are everyday Norwegian comfort: white fish bound with potato, shaped into patties, and browned. The air fryer gives a clean crust without shallow frying.

You want small flakes and some texture, not fish paste.

Pulse fish with potato, egg, milk, flour, salt, nutmeg and white pepper until cohesive but not smooth. Shape into 8 patties. Chill 15-20 minutes.
Chilling firms the cakes so they do not spread in the basket.
Tip. Wet hands to shape cleanly.

Mist cakes with oil. Cook at 380°F (193°C) for 11-13 minutes, flipping at 6, until golden and hot in the center.
Look for a dry, browned crust. Serve with lemon and remoulade.
